Recipe 37: turkey couscous!

More left-overs! This time – I thought I’d have a couscous salad with the leftover turkey – and based on the proposed refinement from the pasta salad I thought I would add some heat using chilli oil.

Making it: this time there was couscous, roasted peppers, tomatoes, salad leaves and a dressing of lemon juice and chilli oil. I soaked the couscous in vegetable stock and a little cumin to add more flavour.

Eating it: mmmm…. another yummy salad of delicious leftover that in no way felt sad… I loved the heat from the chilli oil it was a great new twist on the old standard dressing! After a day that was spent making cake and eating lots of scrummy buttercream icing – it was great to eat something incredibly fresh.

Next time: who knows what will be in it next time – but I’m sure it will be delicious!
