Recipe 23: Salmon with a pesto crust

Back to the lovely dinner party… which was on a blazing hot summers evening – a lovely thought on a slightly grey August day. (Sorry for the break in blogging – no real justification other than laziness!) The main course was salmon with a pesto crust. This was very simple recipe that I have enjoyed other people making for me, but I had not made it myself. As it was a hot day I didn’t want to the food to be too heavy – and this fitted the bill. I served it with boiled new potatoes and some purple sprouting broccoli

Making it: the crust was simple – a mixture of pesto, pecorino cheese and bread crumbs which was  smeared over the top of the salmon fillet. More pecorino cheese was sprinkled on the top and it was bunged in the oven for about 15 minutes, until the crust was browned and the salmon cooked through.

Eating it: Yummy! Really one of those recipes that has disproportionate reward for the effort!

Next time: I probably won’t bother buying expensive, fresh pesto – instead I will use the usual bottled stuff. But this will definitely appear again – it’s a perfect quick delicious dinner that can be multiplied up to serve any number of people
